Processing: Honey method – select ripe red fruits on the tree, retain the mucilage layer during the drying process to create natural sweetness and long aftertaste.
Processing: Ripe red coffee beans are selected, the outer shell is removed but the natural mucilage layer is retained. The beans are then dried directly under the sun, and stirred evenly so that the mucilage layer dries naturally on the beans. This method gives the coffee a mild sweetness, a long aftertaste and a characteristic honey aroma.
